Ingredients

  • 4 ears fresh corn, unhusked
  • 1/4 cup butter, softened
  • 1 tbsp. olive oil
  • 1/2 tsp. grated lime zest
  • 2 tbsp. shredded Parmesan cheese

  1. Soak corn in husks in cold water 10 minutes. Meanwhile, in a small bowl stir together butter, oil and lime zest; cover and refrigerate.
  2. Preheat grill to medium-high direct heat (350°F to 400°F). Place corn on grill rack; grill 10 to 12 minutes or until tender, turning once or twice. Let cool slightly.
  3. Remove husk and silks.* Spread limeâ??butter mixture evenly on corn. Sprinkle with Parmesan, season with salt and pepper to taste, and serve.
