Peanut Butter Stuffed Dates

  • 4 pitted medjool dates
  • 1 tablespoon creamy or crunchy peanut butter
  • ¼ cup chocolate chips
  • ½ teaspoon coconut oil

  1. Using a small spoon or piping bag (or peanut butter in a squeeze pouch), spread ½ teaspoon peanut butter into the center of each pitted date. Melt chocolate chips and coconut oil in a microwave safe bowl in 15-30 second increments, stirring between each microwaving time, until completely smooth. Dip or drizzle dates with chocolate. Refrigerate for 30 minutes or up to overnight.
