- Preheat grill to medium (300°F to 350°F). Coat both sides of steaks with crushed peppercorns; brush with oil.
- Grill steaks, covered, 6 minutes per side or until an instant-read thermometer registers 145°F, or to desired doneness. Remove from grill; let stand 5 minutes.
- Meanwhile, melt butter in a medium skillet; add green onion. Cook, stirring, 1 minute. Add wine and capers; cook until liquid is reduced by half, about 15 minutes. Spoon sauce over steaks, and serve.
