Ingredients

  • 1/2 cup apricot preserves
  • 1 tbsp. butter
  • 1/8 tsp. cinnamon
  • 3 firm nectarines, quartered
  • 3 firm plums, quartered
  • 3 firm peaches, quartered
  • 1 nonfat pound cake, cut into cubes
  • 1/8 tsp. nutmeg

  1. For glaze, in a small saucepan heat preserves, butter, cinnamon, nutmeg and 1 tablespoon water until butter melts. Set aside.
  2. Preheat grill to medium (300°F to 350°F). Thread fruit and cake alternately onto 12-inch skewers.* Brush with glaze.
  3. Place skewers on grill 5 inches from heat. Grill 7 minutes, turning once. Brush with glaze. Remove from grill and serve with remaining glaze.
