Ingredients

  • 1 (22-oz.) pkg. frozen waffle fries
  • 1 lb. lean ground beef
  • 1 (1.25-oz.) pkg. taco seasoning
  • 2 tsp. dried minced onion
  • 1 (16-oz.) can refried beans
  • 1 (16-oz.) can chili-con-queso-flavored processed cheese
  • 1 (14.5-oz.) can petite-cut diced tomatoes
  • 1 (4-oz.) can diced green chile peppers, drained
  • 1 (2.25-oz.) can sliced pitted black olives, drained
  • 2 cups Mexican-style shredded cheese
  • 1 (8-oz.) jar taco sauce

  1. Preheat oven to 450°F. On a baking sheet heat waffle fries according to package directions. Set aside. Reduce oven temperature to 350°F.
  2. Meanwhile, in a large skillet cook beef over medium-high heat until browned. Drain fat. Stir in 3/4 cup water, taco seasoning and minced onion. Bring to boiling; reduce heat. Simmer, uncovered, 5 minutes, stirring occasionally.
  3. On a large oven-proof platter or baking sheet thinly spread beans. Layer with half of the cheese spread. Arrange potatoes over top. Sprinkle with beef mixture, tomatoes, chiles and olives. Sprinkle with shredded cheese.
  4. Bake 10 to 15 minutes or until heated through and cheese melts. Serve nachos with taco sauce and remaining cheese spread for dipping.
