Ingredients

  • 1 lb. lean ground beef
  • 1 (16-oz.) can pinto beans, rinsed and drained
  • 1 (10-oz.) can mild red or green enchilada sauce
  • 1 (10-oz.) can diced green chiles, drained
  • 1/8 tsp. garlic powder
  • 1 1/2 cups coarsely crushed corn chips
  • 2 cups shredded Cheddar

  1. In a large skillet cook and stir beef over medium-high heat until browned. Drain fat. Stir in beans, enchilada sauce, chiles and garlic powder. Bring to boiling; reduce heat. Cover and simmer 10 minutes, stirring occasionally.
  2. Stir corn chips into beef mixture; season with salt and pepper to taste. Remove skillet from heat. Sprinkle beef mixture with cheese. Cover and let stand 2 to 3 minutes or until cheese is melted. Serve warm.
