Ingredients

  • 4 cups fresh raspberries, blackberries and/or mulberries
  • 2 cups sugar, divided
  • 2 1/2 cups flour, divided
  • 4 tsp. baking powder
  • 1/2 tsp. salt
  • 2 eggs, lightly beaten
  • 1 cup nonfat milk
  • 2 tbsp. orange juice
  • 2 tbsp. vegetable oil
  • 1/2 tsp. almond extract
  • 1/4 cup cold butter
  • Whipped topping or ice cream for serving (optional)

  1. Preheat oven to 375°F. Coat a 13x9x2-inch baking pan with nonstick cooking spray; set aside. In a medium bowl combine berries and 2/3 cup sugar; set aside. In another medium bowl combine 2 cups flour, 1 cup sugar, baking powder and salt; set aside.
  2. In a large bowl stir together eggs, milk, orange juice, oil and almond extract until smooth. Gradually add flour mixture; stir just until combined. Pour batter into prepared pan. Spread berry mixture over batter.
  3. In a small bowl combine remaining flour and sugar. Cut in butter until crumbly. Sprinkle over berry mixture in pan. Bake 35 to 45 minutes or until a toothpick inserted in center comes out clean. Cool slightly. Cut into squares. If desired, top with whipped topping or ice cream, and serve.
