Ingredients

  • 1 cup sugar, divided
  • 2 tbsp. cornstarch
  • 1/2 tsp. ground cinnamon
  • 1 tsp. vanilla extract
  • 3/4 cup self-rising yellow cornmeal mix
  • 4 cups blueberries
  • 3 cups strawberries, hulled and quartered
  • 1/3 cup butter, melted
  • 1 cup flour
  • 1 cup lowfat milk
  • Vanilla ice cream

  1. Preheat oven to 350°F. Lightly coat a 2-quart baking dish with nonstick cooking spray; set aside. In a small bowl combine 1/3 cup sugar and cornstarch. In a large bowl combine berries, vanilla and cornstarch mixture until well blended. Spoon berry mixture into prepared baking dish; set aside.
  2. In a medium bowl combine flour, cornmeal mix, cinnamon and remaining sugar. Stir in butter and milk until smooth.
  3. Gently spread batter evenly over berry mixture. Bake 40 to 45 minutes or until a toothpick inserted in center of topping comes out clean. Let stand five minutes. Serve warm with ice cream.
