Sausage and Vegetable Strata

Ingredients

  • 1 pkg. spicy pork sausage, sliced
  • 1 pkg. sliced fresh mushrooms
  • 1/2 medium onion, chopped
  • 2 tbsp. olive oil
  • 2 garlic cloves, minced
  • 2 cups fresh spinach
  • 4 plum tomatoes, coarsely chopped
  • 1/4 cup sun-dried tomatoes in oil, drained, chopped
  • 1 loaf French bread, cut into 1-inch cubes
  • 3/4 cup shredded sharp Cheddar cheese (6 oz.)
  • 9 eggs
  • 2 cups whole milk

  1. Preheat oven to 325°F. Coat a nonstick skillet with nonstick cooking spray and place over medium-high heat. Add sausage; cook 10 minutes or until no longer pink. Drain; remove from skillet and set aside.
  2. Heat oil in skillet over medium-high heat. Add mushrooms and onion; cook 5 minutes or until onion is tender. Add garlic, spinach and plum tomatoes; cook 2 minutes or until spinach wilts. Add dried tomatoes and sausage; mix well.
  3. Coat a 13x9-inch baking dish with nonstick cooking spray. Layer half the bread cubes, half the sausage and half the cheese in baking dish. Repeat with remaining bread, sausage and cheese; set aside.
  4. In a medium bowl whisk together eggs, milk, and salt and pepper to taste. Pour over layers in baking dish. Bake 1 hour or until set and lightly browned. Let stand 10 minutes before cutting into squares to serve.
