- Preheat oven to 325°F. Coat a nonstick skillet with nonstick cooking spray and place over medium-high heat. Add sausage; cook 10 minutes or until no longer pink. Drain; remove from skillet and set aside.
- Heat oil in skillet over medium-high heat. Add mushrooms and onion; cook 5 minutes or until onion is tender. Add garlic, spinach and plum tomatoes; cook 2 minutes or until spinach wilts. Add dried tomatoes and sausage; mix well.
- Coat a 13x9-inch baking dish with nonstick cooking spray. Layer half the bread cubes, half the sausage and half the cheese in baking dish. Repeat with remaining bread, sausage and cheese; set aside.
- In a medium bowl whisk together eggs, milk, and salt and pepper to taste. Pour over layers in baking dish. Bake 1 hour or until set and lightly browned. Let stand 10 minutes before cutting into squares to serve.
