Scallop Caprese Crostini

Ingredients

  • 1 lb. sea scallops, halved
  • 1/4 tsp. kosher salt
  • 1/8 tsp. crushed red pepper flakes
  • 2 tbsp. olive oil
  • 12 baguette slices, 1/4-inch thick
  • 3 Roma (plum) tomatoes, thinly sliced
  • 2 (6-oz.) balls fresh mozzarella, thinly sliced
  • 1/2 cup chopped fresh basil
  • Balsamic vinegar (optional)

  1. Preheat oven to 375°F. Sprinkle scallops with salt and red pepper flakes; drizzle with oil. Coat a large nonstick skillet with nonstick cooking spray; place over medium-high heat. Add scallops; cook 2 to 3 minutes per side or until scallops are seared, and just opaque in the center.
  2. Place baguette slices in oven. Bake 5 minutes. Remove from oven and top each slice with tomato, mozzarella and 2 scallop halves. Sprinkle with basil and (if desired) drizzle with vinegar. Serve immediately.
