Ingredients

  • 1 1/2 lb. unpeeled large fresh shrimp
  • 1 yellow bell pepper, cut into 1 1/2-inch pieces
  • 1 green bell pepper, cut into 1 1/2-inch pieces
  • 1 red onion, cut into 1-inch slices
  • 1 pint cherry tomatoes
  • 1/2 cup fresh lime juice
  • 1/4 cup olive oil
  • 2 tbsp. honey
  • 2 garlic cloves, minced
  • 1/4 cup chopped fresh cilantro
  • 1/4 tsp. freshly ground black pepper

  1. For the kabobs, peel and devein shrimp, leaving tails intact. Alternately thread shrimp, bell peppers, onion, and cherry tomatoes onto skewers, leaving a 1/2-inch space between items.â? Place kabobs in a large shallow dish; set aside.
  2. In a small bowl whisk together lime juice, oil, honey, garlic, cilantro, and pepper. Pour over kabobs and cover. Refrigerate 1 hour, turning occasionally.
  3. Coat grill rack with nonstick cooking spray. Preheat grill to medium-high (350°F to 400°F). Remove kabobs from marinade; discard marinade. Place kabobs on grill. Grill, covered, 5 minutes or until shrimp are pink, turning once. Remove form grill, and serve.
