Ingredients

  • 3 tbsp. red wine vinegar
  • 1/4 cup extra virgin olive oil
  • 1 tsp. sugar
  • 1 cucumber, peeled, seeded and diced
  • 1 medium red bell pepper, seeded and diced
  • 1 medium red onion, diced
  • 1/4 cup chopped fresh parsley
  • 1 large ripe tomato, cored, sliced and diced

  1. For the dressing, combine vinegar, oil, cucumber and sugar in a medium bowl. Season with salt and pepper to taste; whisk until blended; set aside.
  2. Combine tomato, bell pepper and onion with dressing; toss to coat. Season with salt and pepper to taste, sprinkle with parsley, and serve.
