Ingredients

  • 1 (3-lb.) eye round beef roast
  • 1 tbsp. olive oil
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. coarsely ground pepper
  • 3/4 tsp. dried thyme

  1. Preheat oven to 500°F. Rub beef evenly with oil. Season the top and sides with garlic powder, onion powder, pepper and thyme. Place beef in a shallow roasting pan.
  2. Place pan in oven and immediately reduce oven temperature to 475°F. Roast 20 minutes. Without opening the oven door, turn off oven and let beef stand in oven 11?2 hours. (Do not open oven door.) Cook until an instant-read thermometer registers 145°F for medium-rare or to desired doneness.
  3. Remove beef and place on a cutting board. Cut into very thin slices, and serve.
