- Arrange 8 slices of bread on a board and spread with Everything Snack Spread, about 1/2 tablespoon per slice.
- In a medium bowl, use a spoon to mash and mix remaining 4 tablespoons Everything Snack Spread with goat cheese until smooth and combined. Flip half the slices and spread each with goat cheese mixture.
- Layer each with smoked salmon, tomato, red onion and arugula. Top with remaining bread slices, buttered side up.
- Preheat a large skillet over medium heat. Carefully transfer one sandwich to the skillet, cover and cook until bread is golden, 3- 5 minutes. Flip and cook another 3- 5 minutes. Repeat with the remaining 3 sandwiches. Serve hot.
