- In a small bowl combine ginger, garlic and red pepper flakes. Stir in soy sauce and vinegar; set aside.
- Place a wok or large skillet over very high heat 20 seconds. Drizzle oil around the sides; heat until oil is almost smoking.
- Add chicken to wok; stir-fry 2 to 3 minutes. Add soy sauce mixture; cook and stir 1 to 2 minutes. Remove wok from heat. If desired, spoon chicken on rice. Serve hot.
