Strawberry-Kiwi Cream Tart

Ingredients

  • 2 cups graham cracker crumbs
  • 3/4 cup sugar, divided
  • 1/2 cups butter, melted
  • 12 oz. cream cheese, softened
  • 1 1/2 tsp. vanilla extract
  • 1/4 tsp. almond extract
  • 1 (3.4-oz.) pkg. vanilla instant pudding
  • 1 or 2 kiwis, peeled and sliced
  • 1 cup sliced fresh strawberries

  1. Preheat oven to 375°F. In a medium bowl combine graham cracker crumbs, 1/2 cup sugar and butter. Press firmly onto bottom and sides of 10-inch tart pan. Bake 6 to 8 minutes or until crust edges are browned. Cool completely.
  2. Meanwhile, in a small mixing bowl beat cream cheese, remaining sugar and extracts with an electric mixer on medium speed until fluffy. Carefully spread over cooled crust.
  3. Prepare pudding mix according to package directions. Carefully pour over cream cheese layer. Cover and chill 5 to 15 minutes or until pudding is set. Arrange kiwi and strawberry slices neatly on top of tart. Cover tart and chill at least 1 hour more or until firm. Cut into wedges, and serve.
