- Preheat oven to 325Â°F. Coat a 4x8-inch glass or metal baking dish with nonstick cooking spray.
- Cut each chicken breast in half lengthwise so that each piece is approximately 1â?2-inch thick, making 4 breasts. Place each piece between 2 sheets of waxed paper. Using a meat mallet, pound until piece is about 1â?4-inch thick; set aside.
- Place 1 slice of prosciutto on each piece of chicken. Slice fresh mozzarella into 8 thin slices and place 2 slices on top of prosciutto. Sprinkle evenly with garlic powder and basil.
- Roll each piece of chicken jelly-roll style and place seam side down in baking dish. Drizzle chicken evenly with vinaigrette. Bake about 30 minutes or until an instant-read thermometer registers 165Â°F and cheese is bubbling. Let cool 5 minutes, and serve.
