Ingredients

  • Honey Orange Syrup:
  • 1/3 cup honey
  • 1/4 cup fresh orange juice
  • 1 tbsp. finely grated orange peel
  • Fruit Salad:
  • 1 honeydew melon, seeded, rind removed; cut into 1/2-inch pieces
  • 1 (16-oz.) container fresh pineapple spears, cut into 1/2-inch pieces
  • 1/2 lb. strawberries, hulled, cut into quarters
  • 1 cup blueberries
  • Fresh mint sprigs (optional)

  1. For Honey Orange Syrup: Place honey, orange juice and pieces of peel in a small saucepan. Cook over medium heat 1 to 2 minutes or until hot and bubbly. Reduce heat to low; cook 5 to 6 minutes until honey is dissolved. Remove from heat. Transfer syrup to a small bowl; discard orange peel. Cool completely, about 30 minutes.
  2. For Fruit Salad: In a large bowl combine honeydew melon, pineapple, strawberries and blueberries. Drizzle cooled honey syrup over fruit; toss gently to coat. Top each serving with a mint sprig, if desired, and serve immediately.
