Ingredients

  • 2 lbs. carrots, peeled and sliced
  • 1/3 cup red wine vinegar or cider vinegar
  • 1/4 cup brown sugar
  • 1 tbsp. light butter
  • 1/4 cup chopped pecans
  • 1 tbsp. chopped fresh parsley

  1. In a medium saucepan place carrots in lightly salted boiling water. Cook 7 to 9 minutes or until just tender; drain well.
  2. Reduce heat to medium-low. Add vinegar, brown sugar, butter and pecans. Cook, stirring, until well-coated. Sprinkle with parsley, and serve.
