Ingredients

  • 1/2 cup fresh lime juice
  • 1 1/2 tbsp. brown sugar
  • 1/2 tsp. crushed red pepper flakes
  • 1 lb. cod fillets, thawed if frozen, cut into bite-size pieces
  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 1/2 cups fresh pineapple, cut into 1 1/2-inch pieces
  • 1 small purple onion, cut into 1-inch pieces

  1. Combine lime juice, brown sugar and crushed red pepper flakes in small bowl; set aside.
  2. Thread cod, red bell pepper, pineapple and onion evenly onto six 8-inch skewers and place in shallow baking dish. Drizzle with lime juice mixture. Cover and chill 30 minutes.
  3. Coat grill rack with nonstick cooking spray. Preheat grill to medium-high (350°F to 400°F). Grill skewers, covered, 5 to 7 minutes per side, turning occasionally, or until fish flakes easily with a fork.
