Sweet Corn Elotes

  • 6 ears fresh sweet corn
  • 3 tbsp. Mayonnaise
  • 1/4 tsp. ancho chile powder
  • 1 tbsp. lime juice
  • kosher salt, to taste
  • ground black pepper, to taste
  • 1/2 cup cotija cheese
  • 1/4 cup fresh cilantro, chopped
  • lime wedges, for garnish

  1. Heat grill, preferably charcoal, to medium-high. Grill shucked corn for 7-10 minutes, turning occasionally until cooked through and lightly charred.
  2. Mix mayonnaise, chile powder, salt, pepper, and lime juice in a small bowl. Set aside.
  3. Spread mixture on hot corn, and top with cheese and cilantro. Serve immediately.
A charcoal grill adds a touch of smoked flavor to your corn and is highly recommended.
