Ingredients

  • 5 to 6 medium sweet potatoes
  • 2 1/2 cups sugar
  • 1 cup butter, softened
  • 2 eggs
  • 2 tbsp. flour
  • 1 tbsp. vanilla extract
  • 1/2 to 1 tbsp. imitation coconut extract
  • 2 (9-inch) unbaked ready-to-fill pie shells

  1. Peel sweet potatoes; cut into halves. In a Dutch oven combine sweet potatoes and enough water to cover. Bring to boiling; reduce heat. Cover and simmer 25 to 30 minutes or until tender. Drain sweet potatoes; cool slightly.
  2. Preheat oven to 325°F. Place sweet potatoes in a large mixing bowl. Using a potato masher, mash sweet potatoes until smooth. Stir in sugar, butter, eggs, flour and extracts until combined. Pour batter, divided evenly, into pie shells.
  3. Bake pies about 1 hour or until evenly puffed. Cool to room temperature before serving.
