6 (4 oz) Miller Smart Chicken, skinless, boneless chicken breasts
1 1/2 cups water
2 tsp grated lemon rind
1 1/2 tsp fresh lemon juice
1 box Near East Original Plain Couscous
4 + 2 oz San J Sweet & Tangy Sauce
to taste salt and pepper
1 tbsp sliced green onion tops
Directions
Marinate Miller Smart Chicken, skinless, boneless chicken breasts by combining Dannon All Natural Plain fat-free yogurt, salt and pepper, and 4 oz of San J Sweet & Tangy Sauce in a large zip-top plastic bag. Seal and marinate in refrigerator 24 hours, turning bag occasionally. Remove chicken from bag, discard marinade.
Preheat broiler.
Place the Miller Smart Chicken, skinless, boneless chicken breasts on a broiler pan coated with cooking spray. Broil 4 inches from heat for 10 minutes or until a meat thermometer registers 160°.
Heat water in pan
Add the contents of the Near East Original Plain Couscous, the lemon juice, lemon rind, and the remaining 2 oz of San J Sweet & Tangy Sauce and simmer for 1 minute.
Remove pan from heat and cover the pan with plastic wrap.
Allow 5 minutes for the couscous to bloom.
Fluff the couscous with a fork and add salt and pepper.
Place couscous on plate and place yogurt broiled chicken on top
Garnish with sliced green onion tops.
