- For the garlic?thyme butter, in a small bowl stir together butter, rosemary, garlic, Worcestershire, and hot sauce to taste. Shape into a 2-inch-long roll. Wrap in plastic wrap. Refrigerate until needed.
- Coat grill rack with nonstick cooking spray. Preheat grill to medium (300°F to 350°F). Season steaks with salt and freshly ground pepper to taste. Place steaks on grill. Grill 5 to 6 minutes per side (145°F for medium-rare) or to desired doneness. Remove from grill.
- Cut steak into serving-size pieces. Top each piece with a slice of the chilled garlic-thyme butter, and serve.
