Ingredients

  • 2 lbs. lean ground beef
  • 2 (1.25-oz.) pkgs. taco seasoning
  • 2 (14.5-oz.) cans diced tomatoes
  • 1 (8-oz.) pkg. cream cheese, softened
  • 1 (16-oz.) pkg. sour cream
  • 1 (11-oz.) can vacuum-packed sweet corn, drained
  • 1 (4-oz.) can sliced black olives, drained
  • 4 green onions, chopped
  • 2 cups shredded Mexican cheese blend
  • Tortilla chips

  1. In a large skillet cook and stir ground beef, half at a time, over medium-high heat until browned. Drain fat; return all beef to pan. Stir in taco seasoning, tomatoes and 1/4 cup water. Bring to boiling; reduce heat. Simmer, uncovered, 2 to 3 minutes or until thickened.
  2. In a medium bowl stir together cream cheese, sour cream, corn, olives and half of the green onions. Spread beef mixture in bottom of a 3-quart serving dish; top with cream cheese mixture. Sprinkle with cheese and remaining green onions. Serve dip with tortilla chips.
