Ingredients

  • 1/2 cup part-skim ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg white
  • 2 tbsp. chopped fresh parsley
  • 1 pizza crust
  • 2 Roma tomatoes, thinly sliced
  • 1 garlic clove, minced
  • 2 tbsp. chopped fresh basil
  • 1/4 cup shredded part-skim mozzarella cheese
  • Crushed red pepper flakes (optional)

  1. Preheat oven to 450°F. In a medium bowl combine ricotta, Parmesan, egg white and parsley. Spread on pizza crust. Top with tomatoes, garlic, basil and mozzarella.
  2. Bake 8 to 10 minutes or until heated through and cheese melts. Sprinkle with red pepper flakes, if desired, and serve.
