Ingredients

  • 1 tbsp. olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, chopped
  • 1 lb. lean ground turkey breast
  • 1 (15-oz.) can white hominy, rinsed and drained
  • 1 (15-oz.) can low-sodium kidney beans, rinsed and drained
  • 1 tsp. ground cumin
  • 2 tsp. dried oregano
  • 2 tsp. chili powder
  • 1/2 cup gluten-free, low-sodium chicken broth
  • 1 (15-oz.) can no-salt-added diced tomatoes
  • 1 cup reduced-fat Cheddar
  • 2 green onions, thinly sliced

  1. In a large heavy-bottomed pot or Dutch oven heat oil over medium-high heat. Add onion; cook and stir 3 minutes or until soft. Add garlic and ground turkey; cook and stir 5 minutes or until turkey is no longer pink.
  2. Stir in hominy, beans, cumin, oregano, chili powder, broth and tomatoes; bring to boiling. Reduce heat; simmer 10 minutes. Season with freshly ground pepper to taste.
  3. Ladle chili into 6 soup bowls, top with Cheddar and green onions, and serve.
