Turkey-Sweet Potato Hash

Ingredients

  • 1 sweet potato, peeled and diced
  • 3 tbsp. butter, divided
  • 1 onion, chopped
  • 1 red bell pepper, seeded and chopped
  • 1 1/2 cups chopped cooked turkey
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 4 eggs
  • 1/4 cup chopped fresh parsley

  1. Place diced potato in a saucepan; add water to cover 1 inch. Bring to boiling and cook 3 to 5 minutes or until crisp-tender. Drain and set aside
  2. Heat 2 tablespoons butter in skillet over medium heat. Add onion and red pepper and cook over medium heat 5 minutes or until tender. Add sweet potatoes and cook 5 to 10 minutes or until potatoes are crispy. Add turkey, salt and pepper; cook 1 minute more
  3. In separate skillet, fry eggs in remaining butter until desired degree of doneness. Top turkey mixture with fried eggs. Sprinkle with parsley and serve immediately.
