- Place diced potato in a saucepan; add water to cover 1 inch. Bring to boiling and cook 3 to 5 minutes or until crisp-tender. Drain and set aside
- Heat 2 tablespoons butter in skillet over medium heat. Add onion and red pepper and cook over medium heat 5 minutes or until tender. Add sweet potatoes and cook 5 to 10 minutes or until potatoes are crispy. Add turkey, salt and pepper; cook 1 minute more
- In separate skillet, fry eggs in remaining butter until desired degree of doneness. Top turkey mixture with fried eggs. Sprinkle with parsley and serve immediately.
