Tuscan Baked Tomatoes

Ingredients

  • 3/4 cup finely chopped fresh parsley
  • 3/4 cup Italian breadcrumbs
  • 2 garlic cloves, minced
  • 1/4 tsp. crushed red pepper flakes
  • 1 1/2 lbs. plum tomatoes
  • 1/4 cup olive oil
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 cup grated Parmesan cheese

  1. Preheat oven to 400°F. In a small bowl combine parsley, breadcrumbs, garlic and red pepper flakes; set aside.
  2. Cut tomatoes in half lengthwise; remove seeds and juice. Using a spoon, fill with breadcrumb mixture. Place stuffed tomatoes in a shallow baking dish. Drizzle with oil and season with salt and pepper. Cover with foil.
  3. Bake 30 minutes. Remove from oven; uncover and top with Parmesan. Bake 1 or 2 minutes more or until lightly browned.
