Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup shredded reduced-fat mozzarella cheese, divided
  • 4 thin slices prosciutto or ham (about 2 oz.)
  • 1 tsp. olive oil
  • 1/4 cup Italian breadcrumbs

  1. Preheat oven to 350°F. Coat a shallow baking dish with nonstick cooking spray. Cut a slit 3 inches long and several inches deep in the thickest part of each chicken breast (do not to cut all the way through).
  2. Fill each breast with 2 tablespoons of the cheese and 1 slice of prosciutto. Secure with a toothpick. Place stuffed breasts in baking dish; brush with oil and sprinkle evenly with breadcrumbs. Cover with foil.
  3. Bake 30 minutes. Remove foil and bake 10 minutes more or until golden brown and cooked through (165°F). Drizzle with pan juices, and serve.
