Ingredients

  • 1 tbsp. butter
  • 1/2 cup fine plain breadcrumbs, divided
  • 2 cups day-old Italian bread cubes (about 3 oz.)
  • 1 (8-oz.) pkg. fresh mozzarella, drained and diced, divided
  • 6 ripe tomatoes, peeled, seeded and coarsely chopped
  • 1 medium white onion, chopped
  • 4 green onions, chopped
  • 1/3 cup chopped fresh Italian (flat-leaf) parsley
  • 2 garlic cloves, minced

  1. Preheat oven to 350°F. Butter the bottom and sides of an 11x7-inch baking dish. Add half of the breadcrumbs, rotating baking dish to coat the bottom. Place bread cubes evenly in baking dish. Cover with half of the diced cheese.
  2. In a large bowl combine tomatoes, onion, green onions, parsley and garlic. Season with salt and pepper to taste. Spoon tomato mixture over cheese. Top with remaining breadcrumbs and cheese.
  3. Place baking dish in oven. Bake, uncovered, 30 to 40 minutes or until cheese melts and mixture is bubbly. Serve warm.
