Sweet Potato, Apple & Pork Sausage Chili

  • 2 large sweet potatoes, baked then peeled (about 400 for 45 minutes)
  • 5 1/2 cups beef broth
  • 2 tablespoons Olive oil or butter
  • 4 large carrots, chopped
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 lb Ground pork sausage
  • 1 can (15 oz) Garbanzo beans
  • 3 large apples, peeled and chopped
  • 1/2 cup skim milk
  • 1/4 tsp allspice
  • 1/4 tsp nutmeg
  • A dash of Cinnamon
  • salt to taste

  1. In a blender, combine the broth and sweet potato, puree until smooth. set aside.
  2. Heat a large pot over medium heat and melt the butter. add the carrots, peppers, and onion and saute until tender, about 5 minutes. Add the pork sausage and apple and cook through, about 5-8 more minutes.
  3. Once everything is cooked through drain if necessary. Add the puree, garbanzo beans and milk to the pot, stirring gently to lift any browned bits from the bottom.
  4. Add the spices and turn down to simmer, either very low all day or just for 30 minutes prior to serving.
